Abstract. Rubak YT, Nuraida L, Iswantini D, Prangdimurti E, Sanam MUE. 2021. Peptide profiling of goat milk fermented by Lactobacillus delbrueckii ssp. BD7: Identification potential biological activity. Biodiversitas 22: 3136-3145. This study investigated the angiotensin-converting enzyme (ACE) inhibitory activity in BD7, characterizing peptide and its as a bioactive peptide. The starter culture (2%) was inoculated into pasteurized skim (11%), then incubated at 37 °C until it reached pH 4.6. Centrifugation 6000 g x 10 minutes 4 applied. supernatant obtained ultrafiltrated using membrane cut-off with molecular weight 3 kDa, fraction analyzed to determine ACE. Peptides were characterized Nano LC / MS MS, identification peptides carried out based on literature review. ACE Lb. BD7 55.98 ± 3.53%. A total 157 released weights ranging from 770.78 - 2081.12 Da having 7-19 amino acid residues. main hydrolyzed casein (72.6%), cleavage parent protein, specific for aliphatic aromatic acids. similarity residues C-terminal 28 inhibitor peptides, 19 antioxidant ten antimicrobial peptides. Some these have homologous sequences previously reported has produce milk, which is rich

Impedimetric method for estimating the residual activity of freeze-dried Lactobacillus delbrueckii ssp. bulgaricus

The residual activity of Lactobacillus delbrueckii ssp. bulgaricus cultures was analysed using pH and various impedimetric methods (impedance detection time (IDT), conductance and capacitance) to quantify the loss in activity following freeze-drying. The large variation recorded in IDT values for similar levels of activity suggests that IDT is not an adequate parameter for estimating the cultur...

DNA Probe for Lactobacillus delbrueckii.

From a genomic DNA library of Lactobacillus delbrueckii subsp. bulgaricus, a clone was isolated which complements a leucine auxotrophy of an Escherichia coli strain (GE891). Subsequent analysis of the clone indicated that it could serve as a specific DNA probe. Dot-blot hybridizations with over 40 different Lactobacillus strains showed that this clone specifically recognizes L. delbrueckii subs...

csp-like genes of Lactobacillus delbrueckii ssp. bulgaricus and their response to cold shock.

The two csp-like genes from the lactic acid bacterium Lactobacillus delbrueckii ssp. bulgaricus were characterized and designated cspA and cspB. The gene cspA has been identified using a polymerase chain reaction (PCR)-based approach with degenerated primers and further characterized using an inverse PCR strategy. cspA encodes a protein of 65 amino acid residues which displays between 81 and 77...

Profiles of Volatile Flavor Compounds in Milk Fermented with Different Proportional Combinations of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus.

Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus are key factors in the fermentation process and the final quality of dairy products worldwide. This study was performed to investigate the effects of the proportions of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus isolated from traditionally fermented dairy products in China and Mongolia on ...
